Transitional Meal Monday: Cheezy Quinoa Casserole With Marinated Veggies

When working with a client one of our main goals is crowding out. Crowding out is adding in so many new food items the old ones no longer have space to fit in their diet. Every week they are to add in, at least, one new vegetable, grain, or any healthy food item that is not usually apart of their daily arsenal. We also work on having more raw produce added in their daily meals as well.
Here is a great transitional dish that has both healthy raw and cooked foods combined and it’s vegan too.Cheezy Quinoa Casserole
