Left Over Creation… Black Bean, Sweet Potato, Quinoa Burger

Thursday’s are usually new food creation day in my house, after cooking all week we have lots of left over dishes from different meals. In trying not to let any thing go to waste and to make my family feel they’re eating something special, and not just “old food” as they call it, I put all those different dishes together and create something new and exciting. Doing this saves both money, by not throwing out uneaten food, and time, less hours in the kitchen.

This week’s left overs were, black beans from Monday, Quinoa( which I always have cause I just love it so) from Tuesday, and sweet potatoes from Wednesday’s sweet potato souffle. The beans are a bit spicy,  the sweet potatoes are rather sweet from the coconut oil and raw honey added to it for the souffle, and the quinoa is as always delicious quinoa, I thought the trio would make for a very interesting/tasty flavor explosion together. For tonights dinner I created a burger with these ingredients plus a few extra, garlic, yellow  onions, scallions, parsley, and coriander, I sautéed in olive oil.  Of course I also added raw food to this dish as I try to make every meal in our home a raw/cooked fusion meal. For the raw portion I added cashew cheese, avocado, tomato, romaine, and a living kraut.

These burgers were definitely a winner with the hubby, kids, and myself of course. They had no idea their burgers were made from the left overs they complained about not wanting just a few hours earlier. The somewhat spicy, sweet, savory flavors of the beans, sweet potatoes, and sautéed veggies paired well in the burger. It’s definitely a dish that will go on my permanent recipe list. Nothing like eating a delicious meal that is nourishing your body as well. No empty calories in this dish, everything on and in this burger your body can use! 

Ingredients: For Burger Patties(All Organic)

Black Beans
Purple Sweet Potatoes
Tricolor Quinoa
Sauteed Veggie Mix(onions, parsley, garlic, scallions, corriander in olive oil)

In a large bowl add equal parts black beans, quinoa, sweet potatoes, and sautéed veggies. Mix everything together and when completely mixed make into several medium size burger patties. Place patties on a baking sheet and bake at 375 for 20 mins. When done place patty an organic whole wheat bun( or any bun type you choose) add your raw veggies and toppings, and enjoy!
