Vegan Pineapple Coleslaw

INGREDIENTS:

1 cup. Napa Cabbage
1 cup. Purple Cabbage
1 cup. Green Cabbage
2 (lrg) Carrots
6 Scallions(green onions)
1C. Pineapple Chunks
1C. Raw Vegan Mayo

PREPARATION:

  1. Shred cabbage and add to a large mixing bowl
  2. Dice scallions(green onions) and grate or spiralize carrots
  3. Add diced scallions, spiraled carrots, and pineapple chunks to the mixing bowl with the cabbage
  4. Pour in the cup of  raw vegan mayo, mix and serve.
