Raw Vegan Calamari w/ Herbed Ranch Dipping Sauce

INGREDIENTS:

Calamari~

  • 4-6 King Oyster Mushrooms
  • 3T EV Olive Oil
  • 1/3C Nut Milk
  • 1T Lemon Juice
  • 6T Ground Flax Seeds
  • 11/2C Brazil Nut/Sprouted Buckwheat Flour *or any nut or seed based(to keep it gluten free) flour of choice*
  • 11/2Tsp Thyme
  • 11/2Tsp Parsley
  • 11/2Tsp Coriander
  • 11/2Tsp Smoked Paprika
  • 11/2Tsp Onion Powder
  • 11/2Tsp Garlic Powder
  • 1/2Tsp Apple Smoked Sea Salt
  • 11/2Tsp Oregano
  • 1/4Tsp Black Pepper

Herbed Ranch Dipping Sauce~

  • 2C Nut Milk Or Coconut Water
  • 1/2C Cashews
  • 1/2C Pine Nuts
  • 1 Garlic Clove
  • 1Tsp Parsley
  • 1Tsp Dill
  • 1Tsp Apple Cider Vinegar
  • 11/2T Hemp Seed Oil
  • 1/3C Sweet Onion
  • 1T Lemon Juice
  • 1Tsp Onion Powder
  • 1Tsp Garlic Powder
  • 1 Date *Optional*
  • 1/8Tsp Himalayan Salt
  • 1/8Tsp Black Pepper

INSTRUCTIONS:

Calamari Rings~

  1. Rinse and dry the mushrooms. Cut the ends and caps off as only the stems are needed for this recipe.
  2. Cut the stems into 1/4 inch thick disks, punch out holes in the center of the disks to create rings.
  3. Place calamari rings into a bowl, pour olive oil and lemon juice into the bowl and mix. Set aside and allow the rings to marinate while you prepare the batter.
  4. Combine ground flax seeds and nut milk in a small mixing bowl.
  5. In a separate bowl, mix flour, thyme, oregano, smoked paprika, onion powder, garlic powder, coriander, sea salt, parsley, and pepper.
  6. Take the calamari rings first dip them into the flax/nut milk mixture then dip them into the dry herb/flour mixture.
  7. Place the coated rings onto to your teflex sheet.
  8. When all the rings have been coated and put onto your teflex or mesh sheet,  place the sheet on your dehydrator tray and place it into your dehydrator on 118º for 6hrs *if you want a crispier texture add another 2hrs.

* No dehydrator? No worries…. you can place the calamari rings on a cookie sheet and bake them at 400º  for 20mins. This is not raw but still vegan, still delicious, and far better for you than its fried namesake.*

Herbed Ranch Dipping Sauce~

  1. Add all ingredients to blender
  2. Blend until smooth
  3. Poor into glass container and place into fridge until ready to use
