Chocolate Covered Goji Berry Cake Bites

20140105_105213Another raw vegan treat that doesn’t disappoint. It’s delicious and nourishing at the same time, talk about having your cake and eating too. These bite sized treats are loaded with, vitamins C E and B1, antioxidants, manganese, lignans, fiber, and omega 3’s just to name a few. Who knew nourishing the body could be so sweet! INGREDIENTS:

Cake Batter~

  • Brazil Nut Flour
  • Coconut Flour
  • Flax Flour
  • Spices; Nutmeg, Cloves, Cinnamon, Ginger
  • Date Paste
  • Cashew Milk
  • Coconut Nectar
  • Goji Berries*soak in water to soften*
  • Coconut Oil *cold pressed & unrefined*
  • Himalayan Salt

Chocolate Almond Ganache~

  • Raw Cacao Powder
  • Coconut Oil *cold pressed & unrefined*
  • Raw Agave
  • Raw Almond Butter

TOOLS:

  • Dehydrator*optional*
  • Food Processor *or hand mixer*
  • Mixing Bowls
  • Cookie Sheet or Dehydrator Tray

PREPARATION:

Cake Bites~

  1. Put brazil nut flour, coconut flour, and goji berries in food processor and give a quick mix to combine ingredients
  2. Add date paste, cashew milk, and himalayan salt to those ingredients and mix again
  3. The final mixing step is adding in your flax flour and melted coconut oil, mix until all ingredients are combined
  4. Pour mixed batter into a mixing bowl.
  5. Scoop out tablespoon sized batter chunks, roll into balls, and place on cookie sheet/dehydrator tray
  6. Once the sheet/tray is full you can a) put the cookie sheet in the fridge for 2hrs for the bites to set or b) dehydrate them at 115 for 4hrs.
  7. While batter is setting prepare your Ganache
  8. When bites are ready roll each one in the ganache until completely covered by sauce and place them back on the cookie sheet
  9. Refrigerate for 1hr, ganache will harden. Garnish with dried coconuts flakes and goji berries, then enjoy!

Chocolate Almond Ganache~

  • Add raw cacao powder, agave, coconut oil, and raw almond butter to mixing bowl
  • Mix until all ingredients are combined and you have a medium consistency smooth chocolate sauce
  • set aside*do not refrigerate ganache will harden*.
